It’s been a hot summer here on the west coast and my family and I have tried to make the best of these long summer days by using the BBQ more and making lots of salads. No one likes firing up the oven on these hot summer days. I can’t remember a summer this hot in what seems like forever, we love it. Eating an abundance of fresh local summer produce has been enjoyed in our house this summer. We recently went to a neighbourhood garden party and they served this watermelon and feta salad. It was simple but yet refreshing. This salad is a perfect side dish for a BBQ or picnic.
Since the party, I have made this salad at least twice and made a slightly different version both times. The first time I made it I used a vinegarrette with olive oil and white wine vinegar with lime juice. The second time I made it for a work potluck and didn’t want to add a vinegarrette over night, fearing it would be soggy. Instead, the morning of I simply added the juice of 1 lime. It turned out great and was a hit. Miss E and I planted basil in our garden this spring and its been growing like a weed. I decided to add both basil and mint to the salad.

Ingredients
- half of a large watermelon
- 1/4 cup of red onion
- 1/4 cup of basil
- 1/4 cup of mint
- 1/4 cup of feta cheese
- juice of 1 lime
Instructions
- Cut the watermelon into approximately1 inch cubes
- Thinly slice the red onion
- Tear basil and mint into small pieces
- Combine watermelon, basil, mint, and cheese into a medium size bowl
- Add juice of 1 lime and lightly toss
